Carrot soup with a sweet potato thrown in for fun. It's delicious, creamy, and very healthy.

Recipe:
Saute an onion, a few cloves of garlic, and a couple tablespoons of grated ginger in olive oil.
Add about 3 cups vegetable broth, 6-7 chopped large carrots, and a chopped sweet potato.
Cook over medium heat until carrots and potato pierce easily with a fork.
Transfer to blender and blend in batches, adding about a cup of soy milk while blending.
Return to soup pot, stir, and serve immediately.

  1. You should find a substitute for the egg whites and make these:

    They're really, really good.

  2. That does look delicious! I'll add the ingredients to the list for my next grocery run. If I make them, you will surely know....
